    Restriction enzymes

    Restriction enzymes are DNA-cutting enzymes found in bacteria (and harvested from them for use). Because they cut within the molecule, they are often called restriction endonucleases. A restriction enzyme recognizes and cuts DNA only at a particular sequence of nucleotides.
